I love to bake cakes, but spend little time on the cookie side of baking. I think that it’s because I have had some real failures in the cookie department, but I wanted to make some for the surprise party my family recently threw for my mum and dad, as an extra treat and an alternative to cakes. You will need:
125g Caster sugar
100g light brown sugar
125g Butter
1 egg
1 tsp vanilla
225g self-raising flour
1/2 tsp of salt
100 g chocolate chips
100g M&M’s (Chopped)
Method

Preheat the oven to 180C/Gas 4.

In a bowl, Cream the butter and sugar. Once mixed, combine the egg and vanilla.

Sift in the flour and salt. Lastly adding in the chocolate chips and M&M’s.

When you are ready to bake the cookies, roll the dough into small balls, place widely spaced apart. Bake for 9-11 minutes. For really lovely thick and big cookies, leave even more space than below and double the size of the cookie dough balls.
Enjoy
Once ready, allow plenty of time to cool otherwise they can fall apart when still soft. For a real indulgence, why not eat when still warm with some milk or a cup of tea!
