So occasionally on my blog I do like to share recipes (usually baking), but I also thought it might be nice to share a few of my favourite meals. Particularly as more people are choosing to consume less meat and fish, it can sometimes be a struggle to know what to eat.
As much as I love meat alternatives such as Quorn and Linda Mccartney, I personally don’t believe we should eat those every day or just replace any meat with them constantly. Though they are all delicious, and I am so happy to see such a wide range of vegetarian and vegan food options available nowadays, we must also remember they are still processed food. Whilst I am most definitely not perfect with my diet, I do try as much as possible to include fresh and natural ingredients. So I thought I would share some of my favourite foods and meals. Starting with what is probably my favourite meal of the day… Breakfast!
Smoothie bowl
Whilst I prefer to have a smoothie bowl in the summertime, really I could have one anytime. They are very filling, delicious and there is an array of possibilities for what you can combine together.
A staple for me in any smoothie or smoothie bowl is always frozen banana (although you could use something less sweet, like cauliflower). Frozen banana is perfect as it keeps the smoothie bowl really thick, you could even make a healthy ice cream with it also.
My go to ingredients for a smoothie bowl include:
- Greek Yoghurt
- Blueberries
- Strawberries
- Spinach
- Oats
Of course the fun of the smoothie bowl is the toppings! Again the possibilities are endless for what you can top with smoothie bowl with. I always tend use banana as a topping. Chia seeds are also great for adding a little crunch as well as being excellent as a source of antioxidants, fibre and protein. Of course there are a lot of other fruits you can choose from, as well as more savoury options to balance the flavour, if your smoothie bowl has a lot of sweet ingredients.
I love this as a filling and satisfying breakfast.
Scrambled eggs
Personally I don’t really eat eggs very often, I go through phases of liking them, plus I am always looking to eat a more plant based focused diet. But now and again scrambled eggs are a great breakfast to have. Personally, I like having scrambled eggs with a bagel and some fruit on the side or a little sriracha sauce. It’s a good balance and perfect for keeping you full. I’m not a huge snacker anyway, but having a decent breakfast really does prevent you from reaching for the snacks.
Although I do prefer the amazing bagel thins! Sometimes a regular bagel is too heavy, so the bagel thin is a great option.
Yoghurt, Granola and fruit
This breakfast may just be one of my absolute favourites! I wish I could have this everyday, but as it is very sweet, I personally think it would probably be a bit too much. Yoghurt and fruit is a very easy go to breakfast, it’s jut about picking your favourite things to top it with.
The only yoghurt I really enjoy is the Fage 0% greek yoghurt! It is perfect, thick and lasts a long time. I love having granola to add that little bit of crunch to fill you up, I try to use a granola that isn’t too full of sugar, as the fruit will be sweet enough. I then will always add banana, strawberries, blueberries, and drizzle a little honey over it. Of course you can also add nuts, chia seeds, oats and so many fruits too!
Porridge
Porridge is one of those breakfasts that I once found quite boring growing up. Though I used to have it every week and full of sugar as a child! But after avoiding porridge for a good few years, I rediscovered just how great it is as a breakfast choice! Porridge is perfect for breakfast because the toppings are endless, it’s extremely filling and healthy for you. Some of my favourite porridge options are as follows:
- Apple and Cinnamon
- Pears and Apple
- Jam
- Banana and Raisins
- All of these combinations are great topped with honey!
These are just a few of my favourite breakfast options, but there are so many more you could choose from. As you can tell, I much prefer sweet things rather than savoury, but the most important thing to look for is balance!
Of course when in doubt… Pancakes will always be a special breakfast treat too!
