Happy Pancake day everyone!
I have always loved Pancake day since I was a little girl. Most years I ended up being the one to cook pancakes on this wonderful day, as I was just that excited! So of course I couldn’t let the day go by without sharing a few of my favourite ways to enjoy them!
I love both the crepe style of pancake as well as American style, however for pancake day I always try to make them extra special, therefore it’s very much a go big, or go home! So of course that calls for the thick and fluffy American pancakes. For these pancakes I used the fabulous recipe from Jamie Oliver, which you can find here. They take a few minutes to make and all you need after you make the batter is a non stick pan, your spatula and those taste buds!
Lemon, Sugar and Blueberry Pancakes
A little extra sweetness has been added to the classic lemon and sugar combination! I love lemon and blueberries together, it just has this gorgeous fresh flavour to it, perfect as we enter the spring season. On this occasion I decided just to sprinkle a few blueberries on the pancakes, but you could easily add the blueberries into the pancake batter directly. The added heat to the blueberries would allow that burst of sweetness to come through even more, and add a little more variety to the pancakes.
Drizzle on a little syrup or honey and this is a perfect way to start your pancake day!
Berries and Yoghurt Pancakes
This combination is a favourite among many and it’s easy to see why! The combination of yogurt and fresh fruit, does help to make this a slightly healthier breakfast choice than say my final suggestion below. For this, you just need to add Greek yoghurt, or even flavoured yoghurt, if you wish. Put a little spoonful of yoghurt either on each pancake in the stack, or just a large dollop on top. Then add whichever berries you enjoy!
For me, it’s always strawberries and blueberries, you could even throw a little chopped banana too, and of course a syrup of your choice if want some extra sweetness.
Chocolate chip Pancakes
The last option is by far the most indulgent. But hey! If you don’t eat pancakes all year round like me, then this is a day to over-indulge a little!
For this stack, I actually added chocolate chips to the batter, to really make this a chocolate overload!
Once the pancakes were stacked, I melted a little (ok a lot) of nutella in the microwave and poured this over the top. Then you can top these with as little or as many toppings as you like! I really love chocolate and banana. But also wanted some extra fruit, therefore I added some berries into the mix. Lastly I sprinkled some chopped nuts all over to give the pancakes a little crunch. Of course you could sprinkle more chocolate chips over the pancakes or even a scoop of ice cream if you want to make this a dessert.
The options really are endless for pancakes. As you can tell I love the sweet ones, but you can always make some delicious savoury pancakes also.
