Today I wanted to share my favourite Gingerbread recipe! I make gingerbread every year for christmas, ever since watching Nigella Lawson a few years ago make them, and I love baking these cookies. Sometimes I make gingerbread men to hang on the tree, otherwise it’s just little festive treats to enjoy around this time of year!
You will need:
- 350g Plain flour
- 1 tsp Ground ginger (Though I like to add more)
- 1/2 tsp Ground Cloves
- 1/2 Ground Cinnamon
- 1 tsp Bicarbonate of soda
- 100g Butter
- 175g Soft brown sugar
- 1 Egg
- 4 tbsp Golden syrup
Method:
Pre-heat the oven to Gas mark 5.
Mix together the flour, spices, and bicarbonate of soda. Next you will need to make sure the butter is soft, and add this to the powder mix. At this point it will be a crumbly mixture, but don’t worry this will blend together with the wet ingredients.
Once the butter is mixed in you will need to add the brown sugar, then follow this with the Egg and syrup. Mix all of the ingredients together with your hands until it is one large dough ball. Place some flour on a counter or table and using a rolling-pin, roll out the gingerbread until it is of equal thickness.
You can use any cookie cutters you have on hand, and cut out the cookies ready to bake. As this makes quite a large amount of cookies, you will need to repeat the steps a few times. Rolling out the dough, cutting the cookies and once again rolling it out.
Using parchment paper or a greased tray, place the cut outs ready to go into the oven. Bake for around 10 minutes or until the cookies start to turn golden and enlarge.
Allow the cookies to cool and then you can decorate or serve! I decided to decorate my smaller cookies with icing and a little edible glitter. I love how they turned out and hopefully my family love the taste as well!
