Simple recipe: Greek salad with a twist

Whenever summer time comes around, the comfort food some what disappears, the Pimms comes out as does the fresh food that is always so delicious when enjoyed in the sunshine. I know for me personally, I have less of an appetite when the sun is shining. Perhaps it is due to an increase in drinking water, but whatever the reason, when I do enjoy my meals I find that I naturally gravitate towards fresh foods and healthy options. Today I wanted to share a simple salad that I love to have on those ever so rare hot english summer days…

 

This is not only healthy, but oh so satisfying, tasty and perfect with a glass of wine on a sunny afternoon.


Ingredients

  • Feta cheese
  • 3 Large Vine tomatoes
  • 1 Cucumber
  • Half a red onion
  • 2- 3 tbsp of olive oil
  • (Optional) Small handful of lettuce leaves
  • Olives ( I personally don’t like Olives but feel free to add)

Chop up the tomatoes into large chunks, dice the cucumber and the red onion. Mix in a bowl along with the lettuce and olives Lastly add the feta cheese and drizzle with olive oil. For lunch I will have about half of this by itself, but you can also use this as a side salad to a main course to share.
